Eating Healthy
We all need help eating healthy, so here are some ideas and recipes to help you:
Black Bean Sweet Potato Chili
2x15 oz cans of black beans-rinsed, drained
1x16 oz jar of salsa
1 Cup of veggie stock (for vegan) or chicken stock
1 teaspoon of cumin
4 cups of peeled sweet potatoes - cut into 1/2-1" cubes
salt to taste (optional)
2 cloves garlic - minced (optional)
1 jalapeño pepper, seeds and stems removed - diced (optional)
1/2 medium onion - diced (optional)
1 bell pepper -diced (optional)
Add all ingredients to a slow cooker and cook on high for 3 hours. Serve with avocado and a squeeze of lime juice!
